  • 450 ml lukewarm water 💧

  • 10 g dry yeast (or 21 g fresh yeast) 🍞

Step by Step: Farmers’ Bread in the Thermomix

1. Activate the yeast

Place water and yeast in the mixing bowl. Run 3 min / 37 °C / speed 2 until the yeast starts to foam slightly.

2. Add ingredients

Add flour and oil. Then add salt, but avoid direct contact with the yeast (classic tip to keep the yeast alive).

3. Knead effortlessly

Set Thermomix to 5 min / dough-kneading mode. Result: a smooth, elastic dough.

4. Let the dough rise

Leave to rest in the mixing bowl or in a greased bowl covered with a cloth for about 1 hour, until doubled in volume.

5. Shape the loaf

Degas the dough (gently press to release air). Shape into a round loaf and place into a floured tin or cast-iron pot. Score the surface and sprinkle with seeds if desired.

6. Rustic baking

Place the pot in the cold oven. Set temperature to 210 °C and bake for 60 minutes. Starting in a cold oven creates the typical crispy crust.

7. Cool & store

Let bread cool on a wire rack. For storage: slice into large pieces and freeze. Toasted, it tastes like freshly baked.
