  • 1 pinch salt 🧂
  • 2 tbsp hot water 💧
  • 50 g sugar 🍚
  • 2 tsp vanilla sugar 🌼
  • 70 g flour 🌾
  • 50 g cornstarch 🌽

Step-by-step Instructions 👩‍🍳

① Prepare strawberry filling
Soak gelatin in cold water. Pulverize sugar 20 sec / speed 10. Add strawberries and chop 2 sec / speed 5. Squeeze gelatin, add and heat 4 min / 60 °C / speed 3. Pour into a bowl and let cool.
② Fold in cream-quark
Insert butterfly, beat cream stiff (speed 3). Stir in quark 10 sec / speed 2. Fold in by hand into the strawberry puree and chill for at least 2–3 hours.
③ Prepare sponge
Beat egg whites with salt until stiff, transfer. Beat yolks, water, sugar and vanilla sugar 1 min / speed 4. Mix flour, starch and baking powder 10 sec / speed 5. Fold in egg whites 7 sec / speed 2.
④ Bake & roll
Spread batter on baking tray, bake at 210 °C for 7–8 min. Immediately turn out onto a sugared cloth, peel off paper and roll warm. Let cool completely.
⑤ Fill & chill
Unroll sponge, spread filling, optionally distribute strawberry pieces and roll up again. Chill well before serving.
