White Toblerone mousse with the Thermomix.


Ingredients:

  • 300 g of Toblerone white chocolate, chopped
  • 3 eggs
  • 300 ml of heavy cream

Preparation with Thermomix:

  1. Melt the Toblerone chocolate:

    • Place the chopped Toblerone in the Thermomix bowl.
    • Crush for 5 seconds / speed 7 to reduce it to small pieces.
    • Melt the chocolate by setting 4 minutes / 50°C / speed 2.
    • Make sure it is completely melted and homogeneous. If necessary, repeat for 1-2 more minutes at the same temperature.
    • Remove the bowl from the base and let the chocolate cool slightly.
  2. Add the eggs:

    • With the chocolate still warm (not hot), add the 3 eggs to the bowl.
    • Mix for 20 seconds / speed 4, making sure they are well integrated.
  3. Whip the cream:

    • Wash and dry the bowl well to remove any grease.
    • Attach the butterfly whisk to the blades, add the cold cream and whip at speed 3.5, constantly monitoring so it doesn't overwhip. Time may vary (approximately 1-2 minutes).
  4. Incorporate the whipped cream:

    • Remove the butterfly whisk. Add the whipped cream to the bowl with the chocolate and gently mix using 15 seconds / speed 3. If necessary, finish integrating with folding movements using a spatula.
  5. Assembly and refrigeration:

    • Pour the mousse into glasses or individual containers.
    • If desired, place a small portion of the mixture in a piping bag for decoration later.
    • Refrigerate for at least 3 hours for the mousse to set.
  6. Decoration:

    • Before serving, top with some grated chocolate, Toblerone pieces, or use the reserved mousse in the piping bag for decoration.
