Waffle Batter (Thermomix) – The Best Recipe

Ingredients (for approx. 8 classic waffles)

  • 250 g flour (type 405)

  • 100 g soft butter (alternatively margarine or vegetable oil)

  • 2 eggs (size M)

  • 50 g sugar

  • 250 ml milk (plant-based or buttermilk also possible)

  • 1 tsp baking powder (approx. 7–8 g)

  • 1 pinch of salt

  • Optional: 1 tsp vanilla extract or lemon zest


Preparation in the Thermomix

1. Prepare the batter
Add the soft butter to the mixing bowl.
30 sec / speed 4 (If the butter is cold: melt first for 1 min / 50°C / speed 2).

Add sugar, salt, and eggs.
1 min / speed 4.
Tip: For extra fluffy waffles, add the eggs one at a time while the Thermomix is running at speed 3.5, about 30 sec per egg.

Add the milk and mix.
15 sec / speed 4.

Add the flour and briefly mix into a smooth batter.
20 sec / speed 4.
(Don't overmix – otherwise the batter can become tough!)

Separately mix the baking powder with 2 tbsp of milk and add it to the batter just before baking.
10 sec / speed 4.


Tips for Fluffy Waffles

  • Add eggs one at a time – for more volume.

  • Add baking powder just before baking – for maximum rise.

  • Mix only briefly – less is more!

  • Preheat the waffle iron well – only then add the batter.


Storage
The finished batter keeps in the fridge for 1–2 days (well covered).
Stir well again before baking.
If you plan to store the batter, add the baking powder only when you're ready to bake.
