Ingredients for the yellow layer:

  • 20 egg yolks

  • 200g sugar

  • Preparation: Mix 12 min, 40°C, speed 3.5

  • Add 80g sifted wheat flour and mix 20 sec, speed 3

  • Transfer to a bowl


Without washing the Thermomix bowl:

  • Add 160g softened butter and whisk with butterfly attachment 4 min, speed 3
    (If not fluffy enough, increase mixing time slightly)

  • Gently fold butter into egg mixture and pour into baking pan


Ingredients for chocolate layer:

  • 10 egg yolks

  • 100g sugar

  • Preparation: Mix 12 min, 40°C, speed 3.5

  • 20g flour

  • 20g cocoa powder (sifted together)

  • Add flour-cocoa mixture to preparation and mix 20 sec, speed 3

  • Transfer to a bowl

  • Add 80g softened butter and whisk with butterfly attachment 4 min, speed 3

  • Gently fold butter into chocolate mixture and pour into pan


Baking:

  • Bake at 180°C (conventional oven) for about 25 minutes
