Today we bring you another recipe from our friend Luz María Lagoa Vives. Hello everyone! Today I’m sharing a new donut recipe with you: some coated in sugar and others in chocolate. They’re super soft, and the flavor is just amazing.

Ingredients for Sugar and Chocolate Donuts with Thermomix
Dough:
- 350 g wheat flour
- 18 g fresh yeast
- 150 ml milk
- 60 g sugar (30 g granulated sugar and 30 ml inverted sugar)
- 1 egg
- 45 g butter (room temperature)
Sugar glaze:
- 125 g powdered sugar
- Water (as needed)
Chocolate glaze:
- 150 g dark chocolate (your preferred cocoa percentage; I used 70%)
- 50 ml heavy cream (for whipping)
- 35 g butter
Preparation of Sugar and Chocolate Donuts with Thermomix
Preparing the Dough:
- Warm the milk slightly, add the crumbled yeast, and stir until dissolved.
- Place all the ingredients (except the butter) in the Thermomix bowl: 10 seconds / speed 4.
- Let the mixture rest for 20 minutes to hydrate the flour particles.
- Knead for 2 minutes / kneading function, gradually adding the butter in small cubes. Continue kneading for another 8–10 minutes / kneading function.
- Transfer the dough to a lightly greased bowl, cover it, and let it rise until doubled in size (approximately 2 hours, depending on your kitchen’s temperature).
- Deflate the dough (release the air created during the rising process) by kneading it gently for 1 minute by hand.
Preparing the Glazes:
- For the sugar glaze: Place the powdered sugar in a bowl, add water a tablespoon at a time, and stir until it reaches the consistency of condensed milk. Set aside.
- For the chocolate glaze: Break the chocolate into pieces, add the hot cream and butter, and stir until melted. If needed, heat it for a few seconds in the microwave. Set aside.
Shaping the Donuts:
- Divide the dough into 12 portions. Roll each portion into a ball. Cover and let rest for 10 minutes.
- Lightly dust the balls with flour, gently flatten them, and use a piping tip to cut out a hole in the center. Remove the cut-out piece of dough.
- Once all donuts are shaped, cover them and let them rise again until doubled in size (about 1.5 hours, depending on your kitchen’s temperature).
- From the cut-out dough centers, form additional balls to create a total of 14 donuts and one extra ball.
Frying and Glazing:
- Heat sunflower oil in a pan over medium-low heat. Fry the donuts on both sides until golden brown.
- Drain on paper towels.
- Once completely cooled, dip the donuts into the glazes and place them on parchment paper to dry.
