Couscous Salad with Thermomix
Ingredients:
- 150 g of couscous (dry weight)
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of ground cardamom
- 1/2 teaspoon of ground cumin
- 1 teaspoon of tomato paste
- 200 ml of boiling water
- 2 tablespoons of olive oil
- 1 piece of spring onion (approximately 1/2 spring onion)
- 1 piece of bell pepper (pepperoni)
- 1/2 cucumber
- 2 mint leaves (approximately two sprigs)
- 2 lemons (juice of them)
Preparation with Thermomix:
1. Prepare the couscous:
- Place the couscous in a large bowl.
- Add salt, pepper, cardamom, cumin to the bowl and mix well with a spoon.
- Bring water to a boil in the Thermomix: place 200 ml of water in the mixing bowl and set to 5 minutes / 100°C / speed 1.
- Pour the boiling water over the couscous in the bowl and cover it with a lid or a plate. Let it rest for 5 minutes to allow the couscous to absorb the water.
2. Mix the couscous:
- After 5 minutes, uncover the couscous and add 1 teaspoon of tomato paste and 2 tablespoons of olive oil.
- Use a fork or spatula to fluff the couscous and mix it well, ensuring the tomato paste is evenly distributed.
3. Prepare the vegetables and mint:
- Wash and chop the spring onion, bell pepper, and cucumber into small pieces.
- Place all these ingredients along with the mint leaves in the Thermomix mixing bowl.
- Chop the vegetables and mint for 5 seconds / speed 4. If you prefer smaller pieces, repeat 1 or 2 times.
4. Mix everything:
- Add the chopped vegetables and mint to the bowl with the couscous.
- Squeeze the juice of the 2 lemons over the mixture.
- Stir well with a spoon or use a spatula to incorporate all the ingredients.
Tips:
- If you prefer an extra touch of freshness, you can add cherry tomatoes or a little grated cucumber.
- You can let the salad rest in the refrigerator for 30 minutes before serving to allow the flavors to blend.
