20 g extra virgin olive oil
1 teaspoon Provençal herbs
1 bay leaf
1 tablespoon vegetable stock
300 g tomatoes, quartered
50 g red bell pepper, chopped
50 g yellow bell pepper, chopped
50 g green bell pepper, chopped
1 teaspoon salt (adjust to taste)
2 pinches black pepper
200 g zucchini, chopped
300 g eggplant, chopped
