Puff Pastry Cake with Vanilla Custard (Thermomix)


Ingredients (12 servings)

Puff Pastry Base:
  • 1 package of puff pastry

  • 115 g unsalted butter, melted

Vanilla Custard:
  • 150 g sugar

  • 500 ml milk

  • 4 egg yolks

  • 40 g all-purpose flour

Topping:
  • 500 ml whipped cream

  • 225 g cream cheese, softened


Instructions

1. Puff Pastry Base

  1. Preheat the oven to 190°C.

  2. Grease a rectangular baking pan (about 33x23 cm) with melted butter.

  3. Roll out the puff pastry on a lightly floured surface and place it in the pan, pressing it into an even layer on the bottom.

  4. Bake for 15-20 minutes until golden brown. Let it cool completely.

2. Vanilla Custard (in Thermomix)

  1. Place sugar, flour, egg yolks, and milk into the mixing bowl.

  2. Set the Thermomix to 8 minutes / 90°C / speed 4.

  3. Pour the custard into a bowl and let it cool.

3. Topping and Assembly

  1. Clean the mixing bowl and add the whipped cream. Whip it on speed 3.5, watching it until it reaches a firm consistency. Refrigerate.

  2. Without the butterfly attachment, place the cream cheese and the cooled vanilla custard into the mixing bowl. Mix for 30 seconds / speed 4 until smooth.

  3. Spread this mixture over the cooled puff pastry base.

  4. Top with a layer of whipped cream.

  5. Chill for at least 2 hours before serving.
