1 package of puff pastry
115 g unsalted butter, melted
150 g sugar
500 ml milk
4 egg yolks
40 g all-purpose flour
500 ml whipped cream
225 g cream cheese, softened
Preheat the oven to 190°C.
Grease a rectangular baking pan (about 33x23 cm) with melted butter.
Roll out the puff pastry on a lightly floured surface and place it in the pan, pressing it into an even layer on the bottom.
Bake for 15-20 minutes until golden brown. Let it cool completely.
Place sugar, flour, egg yolks, and milk into the mixing bowl.
Set the Thermomix to 8 minutes / 90°C / speed 4.
Pour the custard into a bowl and let it cool.
Clean the mixing bowl and add the whipped cream. Whip it on speed 3.5, watching it until it reaches a firm consistency. Refrigerate.
Without the butterfly attachment, place the cream cheese and the cooled vanilla custard into the mixing bowl. Mix for 30 seconds / speed 4 until smooth.
Spread this mixture over the cooled puff pastry base.
Top with a layer of whipped cream.
Chill for at least 2 hours before serving.
