Have you ever wanted to prepare an elegant dessert – but without turning on the oven and without much effort? I often feel this way, especially when I have guests and want to serve something impressive, light, and that triggers a real “Wow!” from everyone. 😍
This lemon cheesecake mousse from the Thermomix is exactly that: creamy, refreshing, and with the perfect balance between sweetness and acidity that delights from the very first spoonful. The best part: it is prepared in just a few minutes – the rest is done by the fridge.
It is special for three reasons: no baking needed, a wonderfully airy texture, and the perfect combination of intense lemon and tender cream cheese. When I made it for the first time for a summer family meal, it disappeared in minutes. Since then, it has been one of my favorite secret tips. 💛
Before we start, here are the reasons why you will love this mousse:
✅ No oven and no stress: Ideal for hot days or when you need it fast. You only need the Thermomix and the fridge.
✅ Ultra-creamy texture: Whipped cream and cream cheese make it airy yet stable – without heaviness.
✅ Balanced taste: Lemon curd adds freshness and intensity without being too sour.
✅ Individual portions: Perfect for dinner parties, celebrations, or to take along.
✅ Much easier than classic cheesecake: No water bath, no cracks, no baking times. Great result with half the effort. 🙌
And as a bonus: you can prepare it wonderfully ahead of time. Actually, it tastes even better the next day.
For the Mousse:
🥛 240 ml heavy cream (very cold)
🍋 240 ml lemon curd (homemade or store-bought)
🧀 225 g cream cheese (room temperature)
🍬 120 g powdered sugar
🌼 ½ teaspoon vanilla extract
🎨 2 drops yellow food coloring (optional)
For the crunchy base:
🍪 4 graham or digestive biscuits, crumbled
🍬 2 tablespoons sugar
🧈 2 tablespoons melted butter
Notes: Use gluten-free biscuits if needed. For a lighter version, replace part of the cream cheese with low-fat quark. For a stronger lemon flavor, add fresh lemon zest.
Needed:
Thermomix with stirring attachment (butterfly), 6 dessert glasses, a spatula, and a bowl to chill the cream.
Preparation:
Take the cream cheese out of the fridge in time so it reaches room temperature. The cream, on the other hand, must be very cold; optionally chill the mixing bowl for 10 minutes before whipping.
Crush the biscuits and melt the butter. In less than 10 minutes everything is ready – without any rush.
Good preparation ensures a smooth process. And you can taste it in the result. ✨
Secrets to success:
• The cream must be very cold.
• Do not overwhip – otherwise it becomes grainy.
• Fold gently to keep the airiness.
• Add fresh lemon zest only shortly before serving.
Common mistakes:
Problem: Too runny consistency.
Cause: Cream not whipped enough.
Solution: Whip cream again properly and fold in gently.
Problem: Dense texture.
Cause: Air lost during mixing.
Solution: Use gentle, lifting motions.
🔥 Extra lemon: Add more lemon zest and a few drops of juice.
🌱 Dairy-free version: Use plant-based cream and vegan cream cheese.
🧀 Gourmet version: Fold in some mascarpone for extra creaminess.
🍓 With berries: Add a layer of raspberry coulis on top.
👶 Kids version: Half lemon, half white chocolate cream for milder acidity.
Serve well chilled directly from the fridge. Decorate with thin lemon slices, some zest, or extra biscuit crumbs.
Pairs excellently with red fruits, a light herbal tea, or an espresso. Perfect for summer meals, celebrations, or elegant dinners. 🍋✨
🥡 In the fridge: Well covered, keeps up to 3 days.
❄️ Freezing: Not recommended as the texture suffers.
♨️ Reheating: Not necessary, served cold.
Can I skip the food coloring?
Yes, it is only for appearance.
Can I use fresh lemon juice instead of lemon curd?
No, lemon curd provides structure and balanced sweetness.
