Homemade Vanilla Ice Cream with Thermomix

The easiest and most delicious dessert you'll make this summer – no effort, no ice cream maker!

Can a dessert be creamy, irresistible, super easy to make, and only require three ingredients? Yes, it can – and the best part is your Thermomix does all the work while you handle the important stuff: licking the spoon. Today I’m sharing one of those recipes that’ll make you feel like a kitchen genius: 3-Ingredient Vanilla Ice Cream.

The best part? No ice cream machine, no eggs, and no whisking cream while praying it doesn’t curdle. All you need is heavy cream, sweetened condensed milk, and a touch of vanilla to get a result that’s just as good as artisan ice cream. And yes, your Thermomix will have it ready in under five minutes. Culinary miracle? Nope – just clever cooking.

Ingredients (serves around 6 happy people)

  • 1 liter of heavy cream (minimum 35% fat)

  • 2 teaspoons of pure vanilla extract (Madagascar vanilla if you’re feeling fancy)

  • 1 can (approx. 397 g / 14 oz) of sweetened condensed milk

That’s it. The hardest part is deciding whether to have one scoop or five.

Step-by-step preparation (stress-free and full of flavor)

1. Prep your Thermomix – it’s showtime

Make sure the mixing bowl is clean and dry. Insert the butterfly whisk – it’s essential to incorporate air and get that dreamy smooth texture.

2. Cream and vanilla: the dreamy base

Pour the heavy cream and vanilla into the bowl. Start the Thermomix on speed 2, no timer yet – we’re building the base.

3. Sweet magic flows in

While the Thermomix is running, slowly pour in the condensed milk through the lid opening. Take your time – this helps keep the air in the mix and ensures a smooth, even texture.

4. Whip it right

Once all the condensed milk is in, increase to speed 3.5 and let it whip for about 4 minutes, or until it looks like whipped cream. Don’t walk away – overwhipping can turn it into sweet butter (not ideal).

5. Freeze and dream

Pour the mixture into a freezer-safe container, seal it tightly, and freeze for at least 4 hours before serving. No shortcuts – great ice cream needs a bit of patience.

Tips, variations, and bonus ideas

  • Want to level it up? Add chocolate chips, cookie crumbles, salted caramel, or swirl in Nutella before freezing.

  • Vanilla matters: use paste or fresh vanilla bean for a more intense, natural flavor.

  • Let the ice cream sit at room temperature for 5–10 minutes before scooping – perfect texture every time.

  • Lactose-free version? Totally doable! Use plant-based whipping cream and lactose-free condensed milk – works like a charm.
