230 g sugar
3 egg whites (pasteurized)
140 g milk
25 g fresh yeast
30 g sugar
1 tsp salt
270 g wheat flour (Type 405, for pastries)
30 g butter
Place milk, yeast, and butter in the Thermomix mixing bowl and heat for 1 Min./37°C/Speed 1.
Add flour, sugar, and salt. Mix for 15 Sec./Speed 6, then knead for 2 Min. on Dough Mode.
Remove the dough from the mixing bowl, form a ball, and let it rest for 15 minutes.
Meanwhile, preheat the oven to 180°C (top/bottom heat).
Divide the dough into pieces weighing approximately 30 g each, shape them into small balls, and place them on a baking sheet lined with parchment paper.
Bake the buns for about 20 minutes at 180°C until golden brown.
Clean and thoroughly dry the Thermomix mixing bowl.
Add sugar and egg whites to the mixing bowl and heat for 5 Min./90°C/Speed 3.
Insert the butterfly whisk and whip for another 20 Min./Speed 2 until a firm, glossy meringue forms.
Once cooled, cut the milk buns open with a sharp knife or fill them from the bottom using a piping bag.
Evenly distribute the meringue into the buns.
Optionally, dust with powdered sugar and enjoy!
