Step-by-step preparation

① Warm the milk
Put milk, sugar and butter into the mixing bowl. Warm for 2 minutes at 37°C on speed 2 until the butter is melted. This activates the yeast optimally later.
② Add the yeast
Crumble fresh yeast into the mixing bowl or add dry yeast. Stir for 10 seconds on speed 3 so it distributes well.
③ Add flour and salt
Add flour and salt. Mix for 15 seconds on speed 6 then knead for 3 minutes on kneading speed (Espiga function) into a supple dough. The dough should be smooth, slightly sticky and homogeneous.
④ First rising
Let the dough rest in the mixing bowl for 1 hour until it has doubled in size. Don’t forget to cover – this keeps it moist and lets it rise evenly.
⑤ Shaping and second rising
Take the dough out of the mixing bowl and place it into a greased loaf pan. Let it rise again for 30–45 minutes until the dough fills the pan well.
⑥ Baking
Preheat the oven to 180°C and bake the bread for 30–35 minutes until it is golden brown and sounds hollow when tapped on the bottom. Remove and cool on a wire rack.
