Some recipes don’t need to be complicated to impress – this fitness salad made with the Thermomix is the perfect proof. In just 15 minutes, you can prepare a fresh, colorful, and energy-packed dish that combines crisp vegetables with the sweet and tangy note of apple. Perfect for anyone who wants to eat healthy without sacrificing flavor.
This salad is reminiscent of a classic coleslaw but lighter, fresher, and full of vitamins. The mix of kohlrabi, red bell pepper, carrot, and apple adds texture and taste, while the mild lemon dressing with sunflower oil brings everything together perfectly. An ideal salad as a main dish, side, or healthy snack on the go.
🌿 1 bunch of chives (≈ 30 g)
🫑 1 red bell pepper (≈ 150 g)
🥕 150 g carrots
🥬 150 g kohlrabi
🍎 2 apples (about 200 g each)
🌻 20 g sunflower seeds
🍋 1 tbsp lemon juice (≈ 15 ml)
🫒 25 g sunflower oil
🧂 1 tsp salt (≈ 5 g)
⚫ ½ tsp freshly ground black pepper
💡 Tip: For a more intense flavor, replace part of the sunflower oil with high-quality olive oil.
Wash and dry the chives thoroughly. Place them in the mixing bowl and chop for 3 sec / speed 8. Remove and set aside.
Wash and deseed the bell pepper. Peel the carrot and kohlrabi. Core the apples and – if the skin is thin – cut them with the peel on (it adds color and fiber).
Add the prepared vegetables and fruit to the mixing bowl together with the sunflower seeds, lemon juice, oil, salt, and pepper.
Chop for 5 sec / speed 4.
💡 Tip: For a chunkier texture, mix for only 3 seconds; for a finer consistency, increase to 6–7 seconds.
Serve immediately to enjoy the fresh and crunchy contrast.
