Ingredients:
- 1 package of graham crackers (or Digestive), crushed, and a little extra for decoration
- 340 g cream cheese, at room temperature
- 1 cup (100 g) powdered sugar
- Juice of 1 lemon
- A pinch of salt
- 250 ml cold whipping cream
- Lemon wedges for garnish
Instructions:
Step 1: Crush the cookies
- Place the cookies in the Thermomix bowl and crush 5 seconds / Speed 5. Set aside a bit of the crushed cookies for decoration and divide the rest among 4 dessert glasses or cups.
Step 2: Cream cheese mixture
- Place the cream cheese in a clean bowl and beat 20 seconds / Speed 4 until smooth and fluffy.
- Add the powdered sugar, lemon juice, and pinch of salt. Mix 30 seconds / Speed 3 until all ingredients are well combined.
Step 3: Whip the cream and combine
- Attach the butterfly whisk. Pour the cold cream into the bowl and beat Speed 3.5 until whipped, being careful not to overbeat.
- Set aside a portion of the whipped cream for decoration, and gently fold the rest into the cream cheese mixture using a spatula.
Step 4: Assembly and refrigeration
- Pour the cream cheese mixture over the crushed cookies in the glasses. Refrigerate for at least 1 hour or overnight to set.
Step 5: Decoration
- Before serving, top with some of the reserved whipped cream, sprinkle with the reserved crushed cookies, and garnish with lemon wedges.
