Cheesecake Mousse with Lemon in Thermomix


Ingredients:

  • 1 package of graham crackers (or Digestive), crushed, and a little extra for decoration
  • 340 g cream cheese, at room temperature
  • 1 cup (100 g) powdered sugar
  • Juice of 1 lemon
  • A pinch of salt
  • 250 ml cold whipping cream
  • Lemon wedges for garnish

Instructions:

Step 1: Crush the cookies

  1. Place the cookies in the Thermomix bowl and crush 5 seconds / Speed 5. Set aside a bit of the crushed cookies for decoration and divide the rest among 4 dessert glasses or cups.

Step 2: Cream cheese mixture

  1. Place the cream cheese in a clean bowl and beat 20 seconds / Speed 4 until smooth and fluffy.
  2. Add the powdered sugar, lemon juice, and pinch of salt. Mix 30 seconds / Speed 3 until all ingredients are well combined.

Step 3: Whip the cream and combine

  1. Attach the butterfly whisk. Pour the cold cream into the bowl and beat Speed 3.5 until whipped, being careful not to overbeat.
  2. Set aside a portion of the whipped cream for decoration, and gently fold the rest into the cream cheese mixture using a spatula.

Step 4: Assembly and refrigeration

  1. Pour the cream cheese mixture over the crushed cookies in the glasses. Refrigerate for at least 1 hour or overnight to set.

Step 5: Decoration

  1. Before serving, top with some of the reserved whipped cream, sprinkle with the reserved crushed cookies, and garnish with lemon wedges.
