Ingredients:
For the sponge cake
- 2 cups + 2 tablespoons of all-purpose flour
- 1 ½ cups of sugar
- 2 teaspoons of baking powder
- ¾ teaspoon of salt
- 170 g of unsalted butter
- 1 cup of milk
- 2 large eggs
- 1 egg white
- 1 tablespoon of vanilla extract
- 2 tablespoons of Biscoff cookie butter
- 12 crushed Biscoff cookies
For the three milk mixture
- 2 cans (400 g each) of sweetened condensed milk
- 3 cups of milk
- 2 cups of evaporated milk
- 1 teaspoon of vanilla extract
For the Biscoff whipped cream
- 1 ½ cups of heavy cream
- 3 tablespoons of sugar
- 1 ½ teaspoons of vanilla extract
- ¼ cup of Biscoff cookie butter
Preparation
Sponge Cake
- Preheat the oven to 180°C and grease a 33x23 cm (13x9 inch) pan.
- In the Thermomix bowl, place the butter, sugar, and Biscoff cookie butter. Program 5 min/speed 3, until obtaining a homogeneous mixture. Scrape the sides of the bowl with a spatula as needed.
- Add the eggs, one at a time, programming 1 min/speed 3 between each addition. Add the extra egg white and vanilla. Beat 1 min/speed 3.
- Add the flour, baking powder, and salt. Program 20 sec/speed 4 until incorporated. Add the milk and mix 10 sec/speed 4. Do not overmix.
- Incorporate the crushed Biscoff cookies and fold with a spatula.
- Pour the mixture into the pan and bake for 25-35 minutes or until a toothpick comes out clean. Let it cool.
Three milk mixture
- In a clean bowl, add the sweetened condensed milk, evaporated milk, milk, and vanilla. Mix 10 sec/speed 3 until smooth.
- Once the sponge cake is cool, poke holes with a fork and pour ¾ of the milk mixture in several additions, allowing the cake to absorb it. Save the rest to serve with each portion.
Biscoff whipped cream
- Place the Biscoff cookie butter in a small bowl and stir until smooth.
- In the clean and dry Thermomix bowl, place the heavy cream, sugar, and vanilla. Program at speed 3.5 until soft peaks form.
- Add the softened Biscoff cream and continue beating until stiff peaks form.
- Decorate the cake with the whipped cream, using a pastry bag if you want a special finish. Sprinkle crushed Biscoff cookies on top to finish.
